(Waitsfield Kitchen)

Special Flatbreads:

Gaylord Farm bacon* with Dave Hartshorn’s fresh spinach* and spring garlic  shoots*, and spiced lentils

and

Roasted asparagus* with citrus-infused VT chevre*, Lareau Farm foraged fiddleheads*, wood grilled red peppers, and garden chives*

(Middlebury Kitchen)

Local Salad:

Ceasar salad; hearts of romaine*, salt  cured anchovies, Blythdale farms asiago*, Good Companion Bakery croutons*, local eggs*

Special Flatbreads:

House maple- cured & applewood smoked bacon* from local pork, wild baby leeks*, raddichio, mozzarella & aged parmesan cheese, pine nuts, balsamic vinegar

and

Herbed Blue Ledge farm chevre*, slow roasted onions*, local spring garlic*, fiddlehead ferns*, extra virgin olive oil

Seasonal Dessert:
